Chocolate & Me

I currently run an artisanal chocolate factory in Trondheim, Norway called Trondheim Sjokolade where i produce my chocolate under the well-known brand CIELO. During my time in Stockholm, I worked extensively with chocolate experiences holding classes and mentoring professionals in the chocolate field. 

Chocolate is probably my biggest passion in life but to be honest with you, it hasn't always been like this. They say that 9 out of 10 people love chocolate, and the 10th person is lying to themselves.. I think i must have been this person, and  it might have been because I hadn't tried good chocolate yet.

My cousins' favorite chocolate was the big golden coin with chocolate inside, and I remember my grandfather who worked in a petrol station would always bring home a chocolate medal for us to enjoy. Today I buy this chocolate for my son as a remembrance of my grandfather, even though the chocolate wasn't of the highest quality..

My love for chocolate grew as I grew older and I started travelling to different places in Europe. This was where i discovered the chocolateries. There were always long queues there, but people were still happy and amazed by the chocolate they saw. Who wouldn't be excited like a child on Christmas Eve when surrounded by hundreds of chocolate bars, chocolate figures and chocolate bonbons with endless varieties of flavors!   

I had the honor of being mentored by one of the best pastry chefs at the Academy of Pastry Arts in Kuala Lumpur, Malaysia which is considered as one of the best pastry schools in the world. My teacher, Wei Loon Tan, and his team are World Pastry Champions. Nat Bletter from Madre Chocolate in Hawaii, a friend and a mentor has won numerous awards for his Bean to Bar chocolate. We have held Bean to Bar classes together and taught people about chocolate and how to make chocolate from bean to bar. I'm also inspired and have been taught by Frédéric Bau, the founder of The Valrhona Chocolate School i France.

Since 2011 I have participated in building up what has over time grown into a lively chocolate community in Stockholm and Sweden. I started out holding chocolate events where i taught both novices in a fun and relaxing setting and budding entrepeneurs. As the demands for more advanced courses grew I found myself tutoring and mentoring several people ready to start their own chocolateries and I worked as product developer for several of my customers. 

Spring 2019 I got the opportunity to take over after one of Norway's most well-known artisanal chocolate brand CIELO. I look forward to a new adventure this time at the helm of my very own chocolate factory.
